Fairy Flyaway Cupcakes
  • 1 1/2 cups of all-purpose flour
  • 1 tsp baking powder
  • 3/4 cup unsalted softened butter
  • 3/4 cup sugar
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • 1-2 tbsp milk
  • colored sprinkles to decorate
  • Buttercream
  • 1/2 cup unsalted softened butter
  • 1 3/4 cups confectioner's sugar
  • 1/2 tsp vanilla extract
     
  1. Preheat the oven to 375*F/190*C. Put 28 paper liners into muffin pans.
  2. Sift the flour and baking powder into a large bowl and add the butter, sugar, eggs, and the vanilla extract. Mix until the mixture is smooth. Then add enough milk to make a pourable consistancy.
  3. Divide the mixture among the paper liners. Bake in the preheated oven for 15-20 mins. or until the cupcakes are golden brown.
  4. For the buttercream, mix together the confectioner's sugar, butter, and vanilla extract until smooth.
  5. Use a knife to cut a round from the top if each cupcake, then sut the round in half. Spread a little of the buttercream on top of the cupcake then gently press the peices that you cut onto to the cupcake to resemble butterfly wings. Add some buttercream down the middle and around the wings. Add sprinkles if you like.
